Strict regulations apply to the production of Tokaj wine.  The following conditions must be met:

1.the grapes may only be from the varieties of furmint, lipovina and yellow Muscat
2.the vineyard must be registered
3.the grapes may only be from 7 Tokaj villages
4.the quantity, sugar content and state of the grapes must be verified by an employee of the control institution on the day of harvest
5.the document of approval issued by the control must contain:

• the name of the vineyard village, the district, the vineyard's registration number,
• vine variety,
• the quantity, sugar content and a declaration on the state of the grapes.

Tokaj wine is divided into:

• dry Tokaj spontaneous
• sweet Tokaj spontaneous
• Tokaj Lipovina
• Tokaj Furmint

Selection is produced by adding cibéb raisins to  dry Tokaj spontaneous made from Tokaj grape varieties with a content of at least 12% alcohol.  Depending on the quantity of added cibéb-raisins, the Tokaj selection is divided into:

• Tokaj  selection 3 puttons
• Tokaj  selection 4 puttons
• Tokaj  selection 5 puttons
• Tokaj  selection 6 puttons
